Habs probiert, 8bit, utf-8 und quoted-printable geht auch nicht im Outlook.
mein Roundcube Webmail zeigt Umlaute jedoch korrekt an. Wenn mein Outlook
generell
kein text/plain utf-8 könnte, warum bekomme ich eine Mail vom Kollegen mit

Thunderbird dann korrekt? oder wenn ich die PHP Mail an ihn sende und er
die 
weiterleitet sehe ich die Umlaute in Outlook ja auch!? Komisch, nicht? Hier

zum Vergleich der header etc. seiner Mail als Test die korrekt angezeigt 
wird und unten die PHP Mail die nicjht korrekt ist trotz quoted-printable:
