Für "mail" kannst du was wie
# mail -a "From: Ich <ich at meinedomain.de>" ... nehmen

Bei mutt musst Du in die .muttrc eintragen
my_hdr From: Ich <ich at meinedomain.de>

Bei PHP ists bestimmt auch nur eine Parameterangabe.
